
REXBURG — When locals in Rexburg are looking to try new flavors the Wolfe it Down Food Court should be at the top of the list.
Drivers may have noticed the tucked-away parking lot filled with food huts, and trailers, next to Wolfe Lighting and Accents, the name sake of the court, but many are still discovering its existence.
“I feel like a lot of people don’t know about it, but when you’re here it’s a great experience and it kind of just feels like family, and we love making those personal connections with everyone,” Kylie Chlarson, an employee of the Graze Cafe, says.
There are about five eateries in operation in the main street location, and it began with Brad Wolfe’s soft launch last summer. The official grand opening was in March.
Aaron Park, owner of Parks Place Smokehouse, says the food court is one of a kind.
“It’s unique. Everybody here is different,” Park says. “Nothing franchised. This is all personal owners, veterans… people trying to make a difference trying to show people what good food is. That’s what we do in this food court.”
Park says he got started when a neighboring business owner encouraged him to take a leap of faith.
“He tasted my food, and kind of pushed me into doing the whole cabin thing and I don’t regret it, so I jumped in and threw all my culinary experience into BBQ,” Park says.
He says this location is ideal because in a rural community, the low overhead makes it possible to survive as a business owner.
“The low overhead is great. You have the opportunity to do your own thing and to show people your own thing, and if it’s good, it’s going to sell so like, the Graze Cafe. She moved in, her stuff is awesome, she compliments my BBQ, so her success is my success,” Park says.
Park says he loves seeing the customer's reactions to his food, especially his regular, Paula Hope.
“It’s my favorite happy place. I just like … everything I’ve tried here has been good… The flavors are over the top they’re not just ordinary things you get at a fast food place, they’re really well done,” Hope says.
It’s customers like Hope and others that have contributed to the success of the food court.
“The best food in Rexburg I guarantee you is in this food court here. This is where the owners and the people get to create their own thing,” Park says. “Flavors you’ve never tasted before.”
