Quick, easy lunches for students on the run

Books? Check. Homework? Check. Lunch? Uhhhh …

College life can be demanding. There isn’t always time to make a quick, healthy lunch. Tausha Andrus, a freshman from Pocatello, Idaho, always struggles with finding time to eat lunch.

Andrus was in charge of Home, Family and Personal Enrichment for the BYU-Idaho 6th Ward Relief Society last semester, and planned a meeting to do something about it.

“We held a progressive dinner type thing for Enrichment Night,” Andrus said. “It was a big hit.” The women traveled to a few apartments where they learned how to make quick, easy meals.

Andrus researched and found a few lunch ideas the women would enjoy. “Salads were our main pitch,” Andrus said. “They are easy, yummy and healthy.”

Yummy lunch ideas:

• Shell macaroni with Parmesan cheese
• Chicken and cheese tortillas
• Mini pizzas on English muffins
• Grilled cheese sandwiches and tomato soup
• Fried potatoes with seasoning
• Egg in the hole — butter bread, cut hole in middle, cook egg inside hole in frying pan
• Last night’s delicious dinner — reheat, serve
• Mac and Cheese with mix-ins — discover your favorites

Healthy lunch ideas:

• Homemade wrap with leftover chicken, lettuce and other veggies
• Peanut butter and banana sandwich
• Tuna half moons — crescent rolls with tuna salad rolled in them
• Bagel sandwich — cream cheese and ham
• Lettuce wraps — chicken, rice or veggies
• Ants on a log — celery with peanut butter and raisins

(These ideas can be prepared and eaten in a short amount of time while on campus.)
• Frozen burritos
• Campbell’s Soup at Hand
• Hot Pockets
• Rice-a-Roni
• Lean Cuisine pasta — frozen
• Chicken nuggets –— frozen
• Taquitos — frozen
• Bagged lettuce with dressing in separate bag. Combine, shake and eat
