Café
Déjeuner, a lunchtime, student-operated restaurant at Brigham Young
University-Idaho, will open the week of Nov. 12-15.
Created
by culinary arts students in the College of Home and Family Education, the
café will offer lunch service only, as indicated by its French name.
While patrons enjoy cuisine from around the world, students will assume
responsibility for every detail of the operation from menu selection and
production to table settings and business promotion.
“It’s
one thing to prepare food for oneself and to learn it and theory from a
book – you can learn wonderful things that way,” says Jeff
Hamblin, a home and family education faculty member. “But students
can’t really understand the process unless they participate in it.
We’ll now be purchasing more food and producing more food on a daily
basis. Students will be able to understand how the process all works as
well as the type of work it requires. Being able to do it on daily basis
requires a different level of dedication and skill.”
All
food will be made fresh daily. The menu will include starters of soups, salads
and appetizers. Entrees will vary from seafood to wild game, and desserts
will include cheesecakes, creme brulee and ice creams.
While
the menu will be a la carte Tuesday, Wednesday and Friday, Thursdays will
be buffet style. Foods from three or four areas throughout the world
— including Africa, the Caribbean, China, Greece, Italy, Japan,
Mexico, the Middle East and Southeast Asia — will be highlighted each
Thursday during the fall semester. Beginning in January, Thursdays will
feature regional American menus.
Café
Déjeuner is located on the third floor of the Clarke Building in
Room 320. Meals are offered Tuesday through Friday from 11 a.m. to 1 p.m.
Last seating is at 12:30 p.m.
